Try this grown-up twist on a comforting apple crumble, or try our classic apple crumble, vegan apple crumble, healthy apple crumble and apple and blackberry crumble. It's even better served with a jug of our homemade custard.


  • 1kg, peeled and cored bramley apples
  • 1, zested lemon
  • 150g golden caster sugar
  • ½ tsp ground cinnamon
  • 50g golden syrup
  • 2 tbsp sultanas or raisins
  • 100ml bourbon or dark rum
  • to serve custard or ice cream


  • 225g plain flour
  • 150g, chilled and diced salted butter
  • 75g rolled oats
  • 75g golden caster sugar
  • 35g, chopped walnuts
  • 50g demerara sugar


  • STEP 1

    To make the crumble, put the flour, butter and oats in a food processor, pulse to rough breadcrumbs and tip into a bowl. Stir in the golden caster sugar, walnuts and a pinch of salt.

  • STEP 2

    Heat the oven to 190C/fan 170C/gas 5. Cut the apples into quarters, thickly slice and toss with the lemon zest, golden caster sugar, cinnamon and golden syrup.

  • STEP 3

    Put the apples in an ovenproof dish, toss with the sultanas and pour in the booze to evenly coat the apples. Scatter over the crumble mixture, spreading it evenly. Finish by sprinkling over the demerara sugar. Bake for 40 minutes or until golden on top and bubbling around the edges. Serve with custard or ice cream, if you like.
