Cauliflower, walnut and apple salad

Ingredients
- 1 head cauliflower, cut into florets and thinly sliced
- 3 tbsp extra-virgin olive oil
- 3 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 2 apples, cubed
- a handful raisins
- a bunch parsley, roughly chopped
- a handful walnuts
Method
- STEP 1
Whisk together the extra-virgin olive oil, white wine vinegar and dijon mustard with some seasoning in a large bowl. Add the cubed apples, raisins, parsley and cauliflower, and very gently toss together.
- STEP 2
Toast the walnuts, then roughly chop. Tip the salad into a serving bowl and top with the walnuts.
