• 100g white crab meat
  • 1 small red chilli, diced
  • 1 tbsp chopped coriander
  • 1 tbsp chopped dill
  • 1 tbsp chopped chives
  • 1 tbsp low-fat crème fraîche
  • 2 eggs
  • olive oil
  • herb and leaf salad, to serve
  • chilli sauce, to serve (although not if you're gluten-free)


  • STEP 1

    Mix the crab, chilli, herbs and crème fraîche and season well.

  • STEP 2

    Beat the eggs with some seasoning until pale. Heat 1 tsp oil in a small frying pan, and pour in the eggs, making a thin omelette. When the omelette is just set, tip the crab mixture in, fold in half and warm through for a minute. Serve with a herby salad and chilli sauce if you like.
