Ingredients

  • 300ml single cream
  • very strong shot of espresso (or 1 tbsp of espresso powder)
  • 4 tbsp salted caramel espresso martini mixture (or 2 tbsp of espresso martini plus 1-2 tbsp of salted caramel sauce)
  • 8 ready-made pancakes
  • ice cream, to serve

Method

  • STEP 1

    Heat the single cream with the shot of espresso (or 1 tbsp of espresso powder) in a large frying pan. Add the salted caramel espresso martini mixture (or espresso martini plus the salted caramel sauce) and bring everything to a simmer, bubbling for 1 min.

  • STEP 2

    Add a small ready-made pancake, turn it over quickly and then fold it into quarters in the pan. Add another 7 pancakes, one by one, and fold them in the same way – you can overlap them. The sauce should be thicker and more syrupy by now.

  • STEP 3

    Serve the hot pancakes with a scoop of ice cream and any extra sauce drizzled over – add a little more of the alcohol to it beforehand, if you like. If you want lots of sauce then you can easily double the sauce quantities.
