Ingredients
- 6 crumpets
- 50 caster sugar
- 1 large lemon, juiced
- 200g greek yogurt
- 4 tbsp lemon curd
Method
- STEP 1
Heat the grill to high and toast the crumpets on both sides until crisp.
- STEP 2
In a bowl, whisk the sugar and lemon juice. Sit the crumpets on a wire rack over a tray and then spoon the lemon syrup over the tops.
- STEP 3
Leave the crumpets to sit for a few minutes so the sugary topping can crisp up.
- STEP 4
To serve, stack three crumpets per plate like you’re serving pancakes.
- STEP 5
Drizzle any lemony syrup caught in the tray over the plate, then dollop half the greek yogurt on top of each along with a few tablespoons of lemon curd.
