Falafel, beetroot and hummus grain bowl

Ingredients
- 250g microwavable pack cooked mixed grains
- 50g baby spinach, chopped
- ½ tsp cumin seeds, toasted
- ¼ red onion, finely chopped
- ½ lemon, juiced
- 1 tbsp olive oil
- 200g pack (we like Cauldron) falafel
- ½ avocado, sliced
- 100g cooked beetroot, diced
- 4 tbsp hummus
- a small handful of chopped dill
Method
- STEP 1
Heat the mixed grains following pack instructions then tip into a bowl. Add the spinach, cumin seeds, red onion, lemon juice and olive oil. Season and toss together.
- STEP 2
Tip into 2 shallow bowls. Heat the falafel and divide between the bowls along with the avocado, beetroot and hummus. Scatter with dill to serve.
